Comments for Dackie = Dan + Jackie

The latest incarnation of Dackie focuses on cooking and the (hopefully) delicious food we make at home. Jackie is the real chef and I'm the real eater. A match made in heaven, really.

I figured I would show these to someone that could appreciate the beauty of something wrapped in bacon.
Jalepeno Turds- half a jalapeno with a spoonful of cram cheese, topped with a little smokie then wrapped in bacon. Grilled over indirect heat anbout 30-45 minutes with and smoked with a few chunks of oak.

Lily loves cotija and feta cheese crumbled onto her high chair tray. She also loves to gnaw on mango and pineapple pits after I cut off all the fruit. I have a few mango pits in the freezer right now for a treat on a hot day. She can also eat a ton of plain yogurt, Greek yogurt, or shredded cheese.

We share your toddler menu philosophy . . . she just eats whatever we're eating, although I do keep Gerber Puffs and Goldfish on hand for treats and snacks.

Your fritta idea is great, I'm going to have to try that one. A friend of mine makes these for her kids:

Beef cups-I actually use ground turkey, you brown it, mix in BBQ sauce and maybe can of corn or black beans, then take a can of Pilsbury flakey layers rolls, flatten them, press in a muffin pan, fill with turkey mixture, and bake. It makes 8-16, depending on if you divide each roll, and I freeze the extras for future lunches. The recipe and additional variations are on www.allrecipes.com, under BBQ Beef Cups
