paleo friendly granola
2 c raw organic almonds, roughly chopped
1 c raw pepitas
1/2 c raw walnuts
1/2 apple, chopped into big chunks
zest of 1 organic orange
3T juice of orange
1/4 cup unsweetened dried cherries, roughly chopped
3 T organic coconut oil
1 t pure vanilla extract
1/2 t cinnamon
pinch or 2 of sea salt
preheat oven to 250 degrees. line baking sheet with parchment or silpat mat and set aside.
melt coconut oil in the microwave and put in food processor, then add apple, orange juice and zest and puree. put puree in a big bowl and add all the other ingredients. combine thoroughly.
pour granola mixture onto lined baking sheet, press down and spread out to even layer.
bake for 1 hour (ish) turning baking sheet halfway through. let cool completely and bon appetit!
delicious as a snack or breakfast with a little almond milk (with no soy) or coconut milk.
