in july, we and the speers and cervantes families rented a house in kings beach and had us a little vacation. as you all know, no matter how long the vacation, its really never quite long enough, and this was no exception. we rented the house for 2 nights, arriving on friday afternoon and checking out on sunday morning. next time we will not go for less than 3 nights because it just wasnt long enough.

the house was great, although a bit outdated with “interesting” decor. whats that you say? lets put 3 couches in the living room, all with different early 80s floral or scratchy-ass tweed material? why, yes. lets do exactly that. despite the strange decor  it had enough beds to sleep the 10 of us, which is always the hardest thing to make happen. It had a great deck with a gas grill and a little table and some chairs. if you stood in the corner of the patio, leaned to the left, and squinted a little, you could see the lake. not a beach house (already looking for a true beach house for next year) but fun none the less. it was a short drive to safeway, which is key because we always end up making 3-4 trips to the store when we are together. it was also right down the way from the entrance to kings beach which is where we spent our saturday afternoon.

we try to split up the meals when we vacation together, so this year daniel and i took friday night dinner, matt and christie had saturday lunch, and the speers had saturday dinner. we made carnitas tacos + refried beans and had the delicious peach + basil sangria that christie made.  well, i made the carnitas the day before since they take 4 hours to cook, but i cheated and bought good ole rosarito refried beans. the carnitas are easy to make, it takes a long time to cook, but thats all oven work so its not bad at all. some garlic, onions, oregano, cumin, bay leaves, orange peel, salt + pepper, and water or chicken stock. we had just enough to feed all 10 of us, so you can see it makes a ton of food. they are great on tacos or burritos, or even as a torta ( mexican sandwich) on a toasted french roll with lettuce, tomatoes + salsa.

matt and christie cooked up saturday lunch- grilled sausages and toasted buns and served it up with some chips and a yummy italian pasta salad with capers, parmesan, mozzarella and sun dried tomatoes.  jeff and nat hooked up some awesome jambalaya with shrimp, chicken and sausage for dinner on saturday night. sometimes jeff can make it too spicy ( for matt and dan…then they start sweating and need a glass of milk. sissies!) but it was perfect this time,  just the right amount of spice.

blackberry cobbler

its a recipe that i got from my mom a long time ago. julie and i grew up on 5 acres in the country, with a creek that ran right behind our house, and horses to ride, and a big field to play baseball in with all the neighborhood kids. along that creek grew miles (it seemed like miles to my 10 year old brain) of wild blackberry bushes. right around my sisters bday every year, july 10th, we would put on long sleeves and jeans and grab our buckets and walk behind our house and across the creek and pick berries for hours. yes, it was redding, so it was usually 100+ degrees, but we didnt care. we knew that the reward for all the heat and sweat and thorn wounds that we received was some delicious and bubbly blackberry cobbler. not bad a with a scoop of vanilla ice cream.
