I'm in the same boat usually. I brew pales and IPA's way more than anything else. A couple of brews ago I tried a Kolsch Ale. They're pretty light and easy to drink but damn tasty. If you're itching to do something different then go with the Chimay clone. If you're ever looking to brew something for a party that most people will like then go for the Kolsch.
